Tripping Falls Critters to Play Starring Role in New Casa Bonita Menu

Colorado mainstay Casa Bonita was purchased in late 2021 by the creators of South Park, Trey Parker and Matt Stone. Their promise upon buying the legendary Mexican-themed adventure restaurant was to improve upon the food quality. 

“It’s a very low bar,” said restauranteur Dave Yeti, owner of local Tripping Falls eatery Yeti’s Spaghettis. “Literally anything would be an improvement on the food. We could send them a ton of fresh roadkill from the mountains here and it’d be better than anything they served before.”

Woodland Critter Christmas 

So Casa Bonita asked Yeti to put his money where his mouth was. The week of Christmas, 2021, a representative reached out to Yeti and asked him to gather a crate of the freshest and most eclectic pile of roadkill the North-Central Colorado mountains had to offer. 

“Even if it was a joke, we have so many animal casualties up here that it seemed like a good chance to do a bit of cleanup,” said Yeti. “We found literal buckets of spider pieces from The Great Spider Hunt, a few rabbits that didn’t quite make it down the hill in the Ski Bunny Races, a couple barrels full of Taxidermy Toss rejects that got buried in the snow, and some other, less recognizable pieces of animal scattered around.”

Making the Trip to Denver

“We don’t see too many Tripping Falls residents make it to the big time,” said Yeti. “So when people learned that roadkill from our very own town was being shipped to Denver, we decided to have a little going-away party. Plus we needed help pulling the crate up the mountain to a road that was big enough for the delivery truck.” 

The crate was stuffed with icy snowpack from the surrounding area and loaded up on a refrigerated truck, en route to star in Denver’s most anticipated new menu of 2022. 

Back to Feeding the Town

In the meantime, Dave Yeti’s got a town to feed. His classic Moose Meat Spaghetti recipe can be found right here, as he works through his new winter menu. 

“Now that the roadkill excitement has worn down, I can get back to planning my own menu. We’ve had a lot Hoary Marmots in the area this year, and it’s a surprisingly versatile meat.”
